Choose the nicest looking lemon with unblemished skin. Rinse it with water and dry it with a paper towel.

The lemon is softened to make juicing easier. This is done prior to zesting, because juice with come out through the skin if the lemon is zested first. I prefer to roll my lemon to soften it up. The microwave may be used as well. Just microwave it for 15 seconds.

I used to use a small zester for zesting. Once I found the Microplane my other zester went into the trash. Using the Microplane is effortless.

If either zester isn't available, just use a paring knife to peel the lemon. Be sure to not get the pith, or white portion of the lemon. (The white portion is very bitter.) Then cut the lemon peel into very small pieces.

This is the way the zest and the zested lemon will look.

There are many ways to juice a lemon, from fancy big machines to the hand held lemon squeezers. Or you could just squeeze it by hand without using anything. What matters is that there aren't any seeds mixed in with the juice.

I use something from my Florida childhood. When my family would stop at the orange stands to get orange juice, I'd be given an orange with a plastic straw in it. Today it's called a Citra Citrus Sipper.

Occasionally, you can find them in the kitchen section of the grocery store or online for about one dollar.

However the lemon is juiced, if a certain amount is necessary for a recipe, juice it into a measuring cup. Add more if necessary.
